Preventing Vitamin and Mineral Loss when Cooking Vegetables

Raw foods are great because most maintain their nutrients in their raw form. But some people just don’t like raw foods and, believe it or not, there are a few foods that actually release nutrients when they’re cooked. Here are some tips for preventing nutrient loss in the foods you do cook.

Vitamin C – The best way to ensure you don’t lose too much vitamin C is to use as little water and as little heat as possible. Light steaming or stir-frying is best, but most fruits and vegetables with a high vitamin C content are best eaten raw or partially raw. By not peeling vegetables, especially root vegetables when you cook them, you retain over half the vitamin C content in comparison to vegetables that have been peeled and then cooked. Serve promptly, and don’t reheat after keeping in the refrigerator, most of the vitamin C content will be lost from foods which are high in vitamin C and then re-heated.

B Vitamins – It is the heat and water that affect B vitamins, and I find that slow cookers are best here, just keep the heat right down and cook for prolonged periods of time. You consume the liquid that way, which is richer in minerals and vitamins. Bone broths are an exceptionally good way to get an incredible amount of vitamins and especially minerals into your diet. Don’t rinse rice before you cook it, especially brown rice, because you may wash a lot of the thiamin (vitamin B1) away.

Fat-soluble Vitamins A, E and D – Try not to cook these foods in too much butter, fat, or oil because you will end up losing much of the valuable fat-soluble vitamins into the cooking medium. Baking, steaming or broiling are better options when it comes to foods high in the fat soluble vitamins.

Some Additional tips for maintaining nutritional value include:

  • Never overcook fresh foods; excess nutrient loss is in direct proportion to how much heat was applied during the cooking stage.
  • Eat red meat medium rare and not fully cooked, studies conducted by The National Cancer Institute have revealed a 30 percent less cancer risk in those who ate medium rare beef over those who consumed well-done beef.
  • Cooking time and applied heat account for the two biggest factors when it comes to nutrient loss.
  • Use very little water when cooking, steaming and stir-frying foods. It is the water that leaches the valuable vitamins and minerals from your foods.
  • Avoid deep-frying and frying if at all possible.
  • Cook vegetables as soon as you can after cutting them to prevent oxidation and nutrient loss.
    • Remember that the four biggest factors accounting for nutrient loss in your foods are air, fats used in cooking, water used in cooking and applied heat. The less you use of these four elements the better.

Candida Patients And Low Blood Sugar Issues

There are several good reasons why candida sufferers would do well to eliminate starches and grains, and in some instances the high carbohydrate vegetables. Most all grains can potentially feed candida because they have a high glycemic (GI) index just like sugar, and like sugar they feed candida and create insulin resistance within the cells.

I have seen plenty of candida patients over the years with blood sugar problems, especially hypoglycemia (low blood sugar), and there are a couple of reasons why they have developed these issues, here are some of the main reasons:

  • Some candida sufferers eat fruit, and plenty of it, because they have started to react to many different sweet foods which they crave but haven’t figured out that many fruits are equally as bad when it comes to food reactions.
  • Some candida sufferers have very restricted diets but continue to snack on dried fruits with the fallacious belief they are eating a “healthy” snack.
  • Some candida sufferers skip meals or haven’t quite figured out yet that small meals or snacks has a more stabilizing effect on their blood sugar levels, as well as mood and energy control.

Other candida patients I have seen – especially those who used to eat plenty of take-out, drink alcohol or Coke every day, love chocolate bars, etc. – have made an abrupt and sudden change in their diet and decided to “go healthy” very suddenly. Some of these patients have ended up in trouble with weakness, fatigue, dizziness, nausea, headaches, and the many other abnormal signs and symptoms associated with abnormal blood sugar control. For these patients I recommend a good dietary supplement (containing chromium, B vitamins, zinc and magnesium) to help them overcome these issues. Their bodies will adapt to the new diet in about a two to three weeks period.

This is another reason why I often recommend my patients take things slowly but surely. Going “cold turkey” is not always healthy, especially in the case of food addictions. Sometimes going “warm turkey,” or reducing unhealthy foods slowly over time, can be more effective in the long run.

Do you need to drink alcohol several times a week to give you an escape from reality? Perhaps you require numerous mugs of caffeine a day to provide you with a boost, or depend on a typical chocolate bar? These are some of the addictive patterns I see which may lead you into a path of a reliance of uppers like caffeine and downers like alcohol, or even just those high carb foods in general that so many people love to eat day in and day out.

Your appetite may become disordered, your eating patterns erratic and before you know it you could easily develop a digestive problem. And then candida comes along as an opportunistic infection and you develop a yeast infection and poor digestive health. And then you are off to visit the doctor looking for a solution that will generally come in the form of a five-minute visit and an antibiotic or an antidepressant. Problem solved, you think – but wait a minute, that’s when the fun begins. You keep the underlying dietary and lifestyle patterns going but now compound your addictions and compulsions with pharmaceutical drugs to conveniently switch off the problems. And you begin to feel worse, another trip to the doctor or naturopath and yet another drug or dietary supplement. And when you practitioner is finally sick and tired of you complaining about being sick and tired, you may be labeled as a difficult or non-compliant patient.

I had enough of working in medical clinics after more than ten years. That’s when I decided to once again set up my own clinic and work with chronically unwell patients who had enough of being bounced around, hopping from one doctor to another.

The Apple Picker

To be honest, I really don’t care if I upset a few people here or there. I have lost a few patients over the years but I have had good results with many seemingly hopeless cases which were long ago discarded by practitioners who go onto easier pickings, or what one doctor friend called the “low-hanging fruit.” You can’t achieve quality in a brief ten-minute consultation, and the more challenging patients require much more time, valuable time a medical professional simply hasn’t got.

The apples at the very top of an apple tree are the last resort patients. They are much more difficult to pick and win over than the apples at the bottom of the tree, and are probably the best apples when you finally can reach them. There is a risk of falling if you do try to reach out to them, but you get to be a skilled apple-picker after a while; and by falling I mean offending them with more direct talk, or potential strong aggravations they may receive during treatment, etc. These are often the last resort patients who end up in my clinic.

I have been known to be straight up with patients with addictive behaviors, there is no point beating around the bush. “Do you want to get well?” I ask them.

“Yes I do,” is the reply. “Are you willing to do what it takes to get well?” “Yes I am”. “Do you enjoy feeling this terrible, having headaches, bowel problems, fatigue, etc.”

“No, I don’t, I’ve had enough. I’m willing to do whatever it takes. I’ve spent thousands of dollars and really have had enough. I am ready to get well.”

I have often thought about calling my clinic The Last Resort because that is what some patients tell us as naturopaths: “You are my last resort”.

Many naturopathic doctors will have heard these very words, and the longer they practice and the more experience they gain, the more chronic and complex cases they tend to see. It is for these naturopaths that I have developed the Candida Crusher concept as well, for those who see the last resort patients.

He does his thing and I do mine”. Yet another person who feels like she is permanently checked into the Last Resort Hotel.

Are You Cutting Hydrogenated Fats from Your Diet?

Fat. It’s a scary, three-letter word. Dieters tend to avoid it at all costs. The truth, though, is that your body does need some fat in order to function properly, but many of us are eating the wrong type of fat.

The Different Types of Fat

There are four main types of fat: trans fat, polyunsaturated fat, monounsaturated fat, and saturated fat. Saturated fat is typically described as the worst for you, because the carbon atoms bond themselves to hydrogen atoms instead of to more carbon. Monounsaturated fats are technically saturated fats, but they involve two carbon atoms bonded together with one hydrogen atom between.; they could technically split and bond with even more hydrogen. Polyunsaturated fats have at least two double bonds, and many times more. Trans fat is, believe it or not, the only kind of fat that is man-made.

Hydrogenated fats contain a secondary type of fat, called trans fatty acid. They’re named this way because they literally “transport” the hydrogen atoms from the cells where they were created to a new location in your body. Hydrogenated fats, or trans fats, are as bad for you as all of the saturated fats.

The problem is that hydrogenated fat is created when manufacturers add hydrogen to the oils, allowing liquid fats to turn into solids. This gives the fats a longer shelf life. Hundreds and hundreds of the processed foods you eat contain hydrogenated fats.

The Side Effects of Hydrogenated Fats

Hydrogenated fats have a history of causing side effects that are detrimental to your health. Some of these include:

  • Higher LDL cholesterol (bad cholesterol) levels,
  • Lower HDL cholesterol (good cholesterol) levels,
  • Decrease in anti-inflammatory response,
  • An inability to eat or process the healthier fats your body needs,
  • Interference in your metabolism,
  • Decreased testosterone,
  • Diabetes,
  • Immune system depression, and
  • Obesity

When it comes to fighting your Candida yeast infection, one of the key points above is the way hydrogenated fats can disrupt your immune function. The Candida organism is already depressing your immune system, and adding hydrogenated fats to the mix makes it even easier for the yeast to grow and thrive. Alternatives to Hydrogenated Fats

You do need fat in your body, though, in order to function properly. Coconut oil, while considered a saturated fat, is not hydrogenated and actually has a ton of health benefits. Coconut oil helps to give your brain energy, which is especially important since you won’t be getting the ketones produced by glucose while you’re eating a strict no-sugar, no-carb diet.

Ghee is another great alternative and is often called a healing butter. Ghee is butter, which is actually a very natural food, but it is raw and organic and is obtained from the cleanest sources possible. Ghee is a great source of selenium, linoleic acid, vitamin D, and energy.

As you work through the Candida Crusher program, you’ll find that cutting hydrogenated fats is a bit difficult. Give it some time, and by the time you’re finished you’ll feel so good you’ll never even want to look back at packaged products and hydrogenated fats again.
